What size drywall for ceiling?

I've torn down a plaster and lathe ceiling, and am going to replace it with drywall.

My questions are:
1. What size should I use, 3/8" or 1/2"
2. I read somewhere that you should not install full sheets side by side, ie so that the tape seam does not run the length of the ceiling. Makes sense I guess.

Any advice and techniques would be appreciated.
