I don't mean to monopolize your thread on installing the cabinets, and hope some additional ideas will be offered. Your walls appear to be skim coated plaster and lath. You need to assess the condition of the walls after you remove the wall cabinets. Anything behind the cabinets will be hidden, and minor imperfections can be concealed further with moldings.

You also have 50 year old wiring and insulation under those walls. If the walls are not in good condition, you (unfortunately) are better off removing them and installing drywall. This allows the electrical and any insulation to be upgraded at the same time. Drywall is inexpensive and relatively easy, but the demolition of plaster is a mess. I doubt that wall paper has ever been run under the cabinets. It is the wall condition that you need to be concerned with. If the plaster is not falling off, you can go ahead and simply install the cabinets.

Amazing how a project seems to pile on, no?
