uneven floors in old house

My wife and I have just recently inherited a 110 year old house. It's location is in Bon Air, Tennessee. But my question is this, can i jack up my uneven floors on my own and get the floors pretty much even if not all the way? We are planning on taking the hardwood floors up and replacing all the subfloor that needs to be fix and then we was wondering if we could lift each room and then tier it off.Please help me if you can.
