a higher gloss in the bathroom would make it more cleanable,more durable, and more resistant to moisture. Personally I'd prime and then 2 finish coats for best durability and hide. I really do have 30 yrs painting experience, and I don't believe its possible to get satisfactory results the way your painter suggests, and neither does Sherwin Williams.
