ceiling stains turned into condesation dripping

This is a follow up to a question my wife asked yesterday about stains from roof leak while reroofing is being done. The stains that are about 5 inches wide and 9 feet long actually began dripping (sorta like condesation from an ice cold bottle of beer. Before you had said that a stain blocker could be used after the wet insulation was removed and the boards dried out. My concern is that the drywall on the ceiling could loose it's integrity (i.e. sagging, nail pops, cracking) after the roofers leave the job site. I know the time is now to address any concerns that I may have in the future...what do you suggest?

(I have a stomped textured ceiling, but the damage seems to run into all panels of drywall on the ceiling -- so I figured matching a textured ceiling pattern would not be an issue if your recomendation is to have them replaced anyway)
