When I removed vinyl and underlayment in our kitchen, I used a combination Ice Chopper and Coal Shovel (or something similiar). Do make sure that when you're all finished, file your Chopper and Shovel edges so that when you go to use them for what they're REALLY meant for, they'll do the job. You job will definitely ruin the edged but they can be easily put back on.
