First, shut off the water to the shower! The center handle won't come off because there are mineral deposits that have precipated onto the valve shaft and knob. Likely this is the case for the other knobs. The solution is easy. Simply buy a knob/handle puller. It attaches behind the knob and as you twist a T-handle, it slowly pull the knob off. While you're at the store, pick up a set of open sockets used to losen and remove the nuts that are typically behind the wall. The valve will come out after you remove the nut and then you can take it with you and get a replacement. This should solve your problem. You can simply replace the rubber washers but the valves aren't that expensive and while you've got everything out.....why not.
