Staining already finished wood

Bob,

I have seen people on TV programs stain over an already stained piece of furniture. I have dining room chairs that have a very light stain and a coat of polyurethane on them. Can I put a darker stain right over the top of the chairs without stripping? If so, what special finishing touches will I need to make sure the stain and new poly coats don't rub off on me?
