Either with leg(s) or a hanging support.

You can purchase collapsible legs like used on cafeterias tables. If you hinged one edge of the counter top (with door hinges, etc.), collapsible legs could be used and folded up to allow the top to lay (reasonably) flat against a wall when not needed.

Just a thought.
