To the attic, or separates the heated area to an unheated area, you will need to install a vapor barrier first. Plastic sheeting would be best.
As to the need for drywall, there is no structural need, however your local building code may require it for a fire block. Check with your local inspector.
As to finishing the cedar, if left unfinished, it will age to a nice amber color over a period of years. I am not sure what you could use to prevent this darkening over time. Perhaps others will post.
