Flame sensors

A technician would call it a "flame sensor" because that is it's intended application - that is what it is expected to do. An engineer would call it a "thermocouple" because that is how it functions - a bimetallic element that produces a current when heated. A "flame sensor" can describe a number of device types and is not definitive (as far as engineers are concerned), a "thermocouple" describes one type only and is difinitive.
