The thinset bonds the Hardibacker to the subfloor and makes for a much stronger floor than if it isn't bonded. In addition, it fills any gaps and privides full support for the Hardibacker so that it doesn't flex at all.
You could do the project without it, but you would run the risk of the tile cracking.
