Ok...if you've looked at the books about tile repair and didn't see any that you can understand, then (not to be mean) this job may be a little over your head.
What do you mean by "presently falling tile with surrounds"?? Is this a shower surround? If it is then you can just rip down the old tile (the drywall/greenboard/cement board will come with it) then just amke sure that your wall are straight and then follow the manufactures instruction on installing the surround. You will probably have to some plumbing work so expect to learn how to sweat copper and move/replace the drain assembly.
