Back in ancient times, the 1940's and 50's, t&g knotty pine was common and it went right on the studs with blocking between the studs. Today, I would use flooring to do the same thing. When you get to the finishing of real pine, you will find that it is a long and involved process for a big area. The Pergo-type flooring is already finished and you can even put it up in a diagonal direction or several directions. The flooring can be a lot thinner also. You can glue the flooring to the wall. You will have to replace the drywall when you replace the flooring but that will probably be someone else's problem 20-30 years from now. I can't say that I have done this with flooring but I did help my dad put up the knotty pine years ago and still remember what a mess it was. With the enamel paint of those days, the place smelled of mineral spirits for weeks. I haven't checked out costs either but remember that you will have to finish the real pine but the flooring comes prefinished and the finish should last for generations in that usage.
