An old place like that probably has wood lath and three layer plaster. You may have some trouble finding someone who can do the plaster well in that manner.
Before WWII they switched to a gypsum lath (button board) and I'm not sure how many layers the plaster is on that, but probably two. Also requires some skill. This will give you a hard plaster finish.
I'm not sure what the blueboard and plaster veneer will come out like, but I would expect it to be like drywall with a skim coat of compound; not nearly as hard.
With that information, you can start looking for a plaster contractor and discuss it intelligently with him.
