I have quite a bit of natural stone and saltillo tile and have used sealers on both surfaces. Porcelein and ceramic are generally less permeable than natural stone or unglazed tiles, but may benefit from sealing. Either product, properly installed, sealed and properly cleaned using neutral cleaners will provide a very long service life. I have been using Roval products for tile care (www.roval.com) because they are very economical to buy, and work well. First started using them after buying in specialty stores at 3 times the price on online cost. If you install any natural product, you should seal it, and I recommend you seal with one coat BEFORE you install so that grout removal is easier. I prefer water soluble penetrating sealers because they are easier to apply, maintain and strip should the need ever arise, and they perform well. Granite does not absorb very much sealer, but sealer will fill the small natural fractures and pores.
