I'm planning to paint my countertops also, and have done a lot of research. From what I've read, the most important part is the surface preperation. Clean thoroughly, etch the surface with TSP. If there are any low spots caused by wear, paint these areas with primer and then block sand until the area is level. Then paint the whole counter with the primer and let completely dry. This may take 24 hours or so. The best paint to use is a two-part epoxy paint. These are generally thicker and more durable than a latex, but more expensive. I would expect if you're careful with the counter afterwards, two coats of latex would be fine. After the finish coats are completely dry, seal with a polyurethane. This may seem like a lot of work, but is much cheaper and easier than replacing the counter, just make sure to allow each coat of paint to dry completely. Good luck!
