I think the salesperson was concerned with the chemical residue from the paint coming in contact with food prepared *directly* on the counter. If you use cutting boards for food prep (you should) this is less of a concern. (What about the chemicals in formica countertops?) However, if you seal it with the varathane or urethane there shouldn't be a problem. This might be a leftover fear from the leaded-paint days. Good luck and enjoy!
