Refinishing Tip re: Color of Wood

I have some maple accents in my oak staircase. Some of the maple is clear coated and looks very yellow. It's great looking. Some of the maple that's clear coated with one coat of poly looks more than in color. I can easily remove the one coat of poly - any ideas how I can get the wood to look more yellow. I assume these were 2 different types of maple the carpenter used. Any tips appreciated
