removal of kitchen floor tiles

We have recently done our kitchen in ceramics but we left the vinyl floor down and tiles over top...we are sorry now because our floors are worped and they wave up and down..We screwed the whole floor down first but it did nothing..
How can we remove the tiles without having to replace joists or damaging them and will all the morter come of the screening so we can unscrew the whole thing and start over removing the floor underneath...might sound crazy ,please let me know and if there is a way of leveling it an underlayment.
