drywalling on plaster or on Panelling?

My house was built in 1910. I have a panelled bedroom that I would like to replace with drywall. The problem is that the existing panelling sits on top of plaster walls and I have no idea how good the condition of the plaster walls are. I'm afraid to rip down the panelling and put the drywall on top of the masonary walls because of the plaster walls might be crumbled in some areas. How do you intall the drywall on the plaster? with nails or with glue? Someone recommended hanging the drywall right on top of the existing panelling. I'm unsure which method is the best? Also, is there a 1/16" drywall available? I'm afraid the 3/8" will be too thick for the adjoining moldings, window and door jams. Thank you.
