How thick should my ceiling drywall be?

I've heard too many conflicting versions of this from weekend warrioes, ranging from 3/8, for ease of installation to 5/8 to prevent waving.

All I want is a nice looking rock ceiling. I have 16in Joists above.

Any insight would be appreciated.
