Don't use pre-mixed. You will regret it!

Thinset is mortar -- it is based on actual concrete which will set underwater. Pre-mixed is really a type of mastic and as Tomh stated it sets by evaporation and it is not a true mortar. Mastic or pre-mixed can lose its bond because of water or moisture or heat, or any number of other reasons. Use thinset and be happy!
