leveling floor

I recent;y started to remodel a 100 year plus house. When we tore up the first (of 4 approximate) layers of subfloor, we found shims cut to various thicknesses trying to level floor. Problem was shims were installed 24" aprt therefore causing movement in flooring and causing subfloor to delaminate. QUESTION; Has anyone ever used a floor leveling compound and then installed another subfloor layer over top of cured compound?
