Stripping and refinishing badly refinished wood kitchen cabinets

We recently bought a house with great maple kitchen cupboards. The previous owners sanded them down to remove a dark cherry stain and then varnished the wood. Looked good for a while, but I think they only used 1 or 2 coats of varathane, as I am beginning to see dark water/oil stains on the wood of the doors around the cupboard handles - Looks terrible. Any spills on the wood stain if not removed right away.
We bought new handles and would like to refinish the cupboard doors before putting them on. Do we sand the doors and cupboards down again, or should we strip the doors before sanding and varathaning them? Most importantly, how do we get the stain out of the wood? Any advice would be appreciated!
