The high gloss bricks may be a problem for adhering a new tile or stone surface. My inclination would be to remove them using an air chisle or hand tools, then smoothing over the surface underneath with a trowled thinset.

You might check with a tile dealer to see if they have a mastic they will guarentee to perform over this surface without rip-out, but I doubt it. Once you decide to tear out the old brick (basically a tile), resurfacing with stone, ceramic or porcelein tile should be fairly straight-forward.

FYI, an air chisle is a $50 tool that are handy if you own (or can borrow) an air compressor. They very quickly take off old tile, brick and mortar. It is like being able to strike 10 hammer blows on a chisle per second and the tiles literally fall off from the rapid vibration and impact. A real time saver, I have used to take apart brick walls and clean up the bricks for reuse. It should work well in this application.
