Pine flooring - finishing question

I have just put down new pine floors in my house and of course as the seasons change, the wood will expand and shrink. One guy that gave us a quote on finishing the floors for us suggested that he place puddy or something in the grooves of the boards so that they wouldn't look so gapped when they do shrink, but I am afraid it will end up making it look really bad when they do shrink if we decided to go that route. Any suggestions?
