Leveling Compound to use over subfloors

We need help with this one....we are putting down a leveling compound over part plywood floors and part particleboard floors before we can lay our vinyl tile squares. Now the problem is that the leveling compound is hard to work with. When we followed the manufacturers instructions the compound started to dry too fast before we had it all down and ended up with hard compound in the bucket we were using. So the next time we made it wetter and it went down easier, took 3 days to dry but now it's powdery on top. Is their anything else that we could use instead so that we can level it and then put down our new vinyl tiles? Or any suggestions on what might make the job go easier....tricks of the trade????
