I've used a heavy duty router and spiral bits to surface Cypress slabs for tabletops........
Runners are attached to the sides of the table establish a flat "plane"..........and the router is mounted to a large carriage that rides on the runners..........Back n' Forth.......
Oh but I imagine this is an old end grain maple butcher block table........severly "dished" by the constant chopping ...........'Hard' wood and prone to chip-out..........
