Repair plaster in my kitchen

I had to take out a counter, and unfortunately part of the paint (quite a few layers) and a few large chunks of the plaster. Large as in maybe a couple inches being the biggest. I am just starting to try and make my 80 year old look better, but this is my first attempt at anything. I tried using spackling, but I can't get it to look right. I heard it has to be put on in coats, but after the first coat, I am unsure about my method of attach. I have also lost about 3 coats of paint from around a doorway and am trying to figure out how to fix that "the correct way" Thank you for any help someone can offer.
