first, why are you carrying on about plaster being better than drywall? He's putting up blueboard,a plaster backer, so apparently it will be plaster walls.
regarding drywall: 1/2" drywall is standard for walls. 5/8" is standard for ceilings.
The stuff about the room not being able to breath through the wall is just goofy.
