Galvanized Pipe fix

I need to replace a 12 inch long galvanized pipe nipple in a gas circuit. How do you unthread (unscrew?) both sides of the nipple?. When you try to undo one end it would tighten (if possible) the other right ? and even if I cut it and undo both ends individually how do I fit the new nipple?
Do I have to undo the whole circuit ? and start fitting from the broken nipple ?

Please help. I am sure I am missing something but cannot think what ...
