Drywall over existing wall

I have been going around in circles debating if I should:

1.) remove existing plaster and lathing and replace with drywall. This would entail that I cut 1/4 inch strips (with a table saw) and apply them to the the studs in order to match up the framing (window and door trim/baseboards, etc)
The existing lathing and plaster = 3/4 inch, blueboard comes in 1/2 inch, hence the 1/4 inch strapping. This als

or

2) Drywall over existing walls with 1/4 inch board. and find a solution for matching up trims/baseboard/electrical boxes etc.

or

3) Use existing walls and skim coat them.

Please keep in mind that I will be changing some electrical boxes as well.

I'm looking for any advice that anyone can offer.
