Matching wall depth

I have ripped spacers and applied them to studs under drywall with good success. In your case, you may be able to use the existing lath to shim out the drywall. I recommend staying with the 1/2 inch drywall as 1/4 or 3/8 is simply too flexible to perform well.

Taking out the plaster walls provides an opportunity to update insulation, electrical and plumbing if needed. Since I don't know what this project is, the option to skim coat existing walls is fine, as long as the plaster is well adhered to the lath and you do not need to access inside the walls.
