Consult an architect. They will provide plans for the house you want and are able to discuss and/or recommend different options you may want, whereas, in my opinion, a design/build outfit will recommend a certain component based on their familiarity or prearranged deals with suppliers, and convince you its the best choice. The architect is just providing plans.

Then take your plans to builders for bids. They will price out the work, and most likely recommend changes to certain components. Since you now have a working relation with your architect you can seek advice from them about the builders desired changes.

I'm not saying design builders are shady or conniving, because they are not (generally). I think this way you will end up the house you picture, with less stress. It may cost a little more, but just call around to a couple architects for some initial info and ideas on fees. You already know what the design/builders say.
