take the plaster off and or leave it. Either way you can anchor wood to the corners. It's like putting up a new wall with studs, drywall and plaster, but it just happens to be in front of a fire place. If you still use the fire place and the plaster is bubbling it is getting to hot because there is no air space between the chimney and plaster.
