We have a copper vegetable sink on the island. For a while we were constantly polishing using metal polish, but it always came up bright. Last fall I applied a clear coat of lacquer, basically automotive clear coat. Since then, we just wipe it clean using non-abrasive cleaner. No problem.

The copper apron will probably come with a clear coat. Should it ever fail, it is easy to polish and reapply. Be sure to get solid copper, not just plated, or it will wear through eventually.
