It depends on what you mean as remodeling, if you simply replace a toilet or sink you don't have to rip into all the walls to check the plumbing. However if remodeling means moving stuff then you do need to make sure it is vented properly. As for the wall - vents go up. The only exception is an island vent in a kitchen and that still remains above the waste line.
