You would get the best advice from a painter or furniture stripping contractor.

Only way to effectively 'lighten' paneling is to paint over it.

You could try to strip any varnish finish to expose the raw wood, but it would still need to be sanded and/or bleached and restained for a lighter result. This is often much more costly than replacing the wood altogether and starting anew.
