Gut Renovation

We might buy an apartment that needs a gut renovation. It is only 1,000 sq. feet, but all walls, ceilings and the hardwood floors need to be removed. I work in the restaurant business, and have seen such projects get done in 2 months, but I know it would be much slower for a residential project. Has anyone done a project like this?
