Cutting Uneven Drywall

I have gotten myself into a jam <---bad pun.

I need to get two doors and a window cased this weekend. The problem is not the installation of the casing, but with the hight drywall on the jambs. The drywall is about 1/8th to 3/16th of an inch higher than the jambs. Using jamb extensions is not going to be possible. I am going to need to cut back the drywall so it is even with the jamb.

My questions are:
1. What tool(s) is best used to cut back the drywall?
2. Is there another method that might be better?
