Water stains probably resulted from the logs not being "chinked" not sure about spelling. That is the white caulk like stuff between the logs. You wll want to try a log home build/ repair company to fix that. As for the stains, all I can think is drywall over it. Good if you don't like the log/ rustic look but bad if you do like it.
