Double check with the code, but plastic boxes should be just find. Get the ones with the wings and screw them on the fat side (3-1/2 inch) of the stud. If you gang 2 or more, put a 3/4 inch plywood backer between two studs.
Some places (like many places in California) require conduit everywhere, including wood studs. So check with the local building authorities. I live in Ohio and used the plastic grommets. They are pretty cheap!
