Plaster wall redo?

I have just taken on a project in my 1932 home. I am going to be applying a venician plaster finish to the walls in my dining room. I have taken the trim off of the windows to strip and refinish and I noticed that some of the paint was coming with it. To make a long story short I have most of my walls stripped down to the original plaster surfce with just a putty knife. There was a brown paper covering over it that made it come off fairly easy. I have now found one big hole in the plaster showing the wood slats behind which someone once tried to fill with drywall compound. It is breaking out now and I didn't know how I should fill the material back in. I didn't think it was really important because I am doing a textured finish anyway. How do I approach this?
