cafeteria expansion

We are planning to replace/expand our cafeteria, but we don't know where to expand it to. It was built in 1980. The room is sort of odd shaped, and behind it is the kitchen. Since there are existing rooms to each side, we can't expand sideways so we hve to expand out the back. So we will have to expand into the kitchen. The only problem is that there is a block wall separating the kitchen. How will we remove that? Then we will have to remove the back wall and build on. So will we need to replace the kitchen equipment too? What about the walk-in freezer? Will we need a new ceiling and hood too? How do I tell if the equipment is gas? There are tubes running into the equipment, but it could just be electric wire conduit?
