Go to http://wickswww.freeweb-hosting.com/ , which is Wicks Weekend Warriors Website, then click on the "Tips and Tricks" section, then on the "REAL Fake Ceiling Beams" link. That has full instructions on the general process. I would use 1x8 walnut for the outside or you could go to 1x10, or just let what wood you can get dictate the dimensions. Other than at Big Box stores, hardwoods aren't always to those nice even dimensions that you see for soft woods. You should be able to find a cabinet shop that can do the work if you can't do it but you will have a general idea now what has to be done. And you should be able to find one locally but you may have to spend a little time on the phone.
This will be a bit "pricy" in real walnut, even using 8 footers and scarf joints to get to your length. You might also consider using the faux, structural foam beams and a list of links for this is in the library section here or someone may be kind enough to post it here.
