Don't know why you could not leave it bare. Except that it will be hard to clean, and it may absorb stains, and it will expand/contract more than if you seal it. So I would seal it.
Usually a clear finish cannot be roller applied; read the label and see if that is specifically mentioned. You could probable roll it on and then brush it out immediately.
