I don't know about the best product to remove the old vinyl but I would suggest that you anchor the cabinets to the subfloor and lay the tile afterward. You can use a small moulding strip to hide the edges. You may want to replace the tile in the future which would necessitate breaking the old tile and shimming the cabinets or something...a real pain.
