Replacing Recessed Lighting with New Fixtures

I am preparing to remove two instances of recessed lighting over my kitchen island, and replace them with stem lighting. The opening for the recessed lighting is obviously much larger, and the electrical box will need to be replaced I am sure. What are the steps in patching the holes to reflect the size of the stem lighting covers, and in adding the electrical box needed??
