Condensation

Too much moisture and cold surfaces.
I would prefer to fix this by setting up a dehumidifier to reduce the moisture, but they can be a bit expensive. You could test the idea by renting one for a couple days.
The other fix is to insulate the cold surfaces, but that may not be easy to do. Possibly buy a couple water heater insulation blankets.
